O MRS…Oriental mushroom, rocket and steak salad.

So something you need to know about me… 90% of the time you are likely to encounter mystery box ingredients in my kitchen. Unless I specifically plan a meal, I go into the grocer and buy random fresh stuff. I feel like that’s the best way to keep me on my toes & helps me stay creative in the kitchen. I also hate wasting so I try to use every last ingredient before it dies.

This last Friday I had to deal with a quarter green pepper, rocket & mushrooms.

Serves one hungry person. So double up where necessary.

Preparation time: 30minutes.
Ingredients:
1/2 Spanish red onion sliced fine
1/4 julienne green pepper
1/3 punnet mushrooms, sliced
1/2 teaspoon crushed garlic
Salt to taste
150g-200g free-range rump steak
Ground black pepper and mustard powder
2 tsp plain yoghurt
1/2 teaspoon toasted sesame seeds
Pinch of red chilli flakes

Oriental style marinade
3 tbsp thick soy sauce
1 tbsp BBQ sauce (store bought)
1 tsp steak & chops powder/rub (store bought)
1 tsp crushed ginger garlic

Instructions:

Mix oriental marinade. In a separate bowl, place the steak in 3/4 of the marinade.

Add yoghurt, sesame seeds and chilli flakes to the remaining 1/4 marinade. This is your salad dressing.

Coat a frying pan in olive oil & bring the pan to a medium to high temperature. Adds onion & green pepper & fry for 3 minutes, then add mushrooms and crushed garlic. Fry for 5-6 minutes. Sauté every few minutes. Once done turn the heat off but leave the pan on the stove to remain warm.

Once you have added mushrooms, prepare another pan with olive oil. A tablespoon at least. Bring the pan to a high heat. With a pair of cooking tongs, place the steak in the pan. I like my steak medium. So 3 minutes on each side, crush some black garlic and mustard powder over the steak before its second turn. On each side’s second turn, I fry for another 1 minute. And I baste the steak with remaining sauce. Your pan will look like a bit of a war zone, but a nice charred, maybe a little bit crispy outside is what you are looking for. Rest for 3 minutes to let all the juices get sucked back in from the ends.

Prepare some rocket on a plate. I tear it into smaller pieces so it’s easier to eat.

Arrange the mushrooms down the middle.

Slice your steak after it has rested, and arrange just slightly on top of mushrooms.

You can just arrange & serve however you please. I’m still refining plating skills to amateur level, let alone pro plating.

Drizzle with the salad dressing and….
